The Roots, you listed them but they're about as good as it gets. Back in the days, before samplers became prominent parts of hip hop production, you had people like Stetsasonic, Sugar Hill Gang, Kurtis Blow, etc.

Stetsasonic- Talkin All That Jazz

Sugar Hill Gang - Rappers Delight

Kurtis Blow - The Breaks

You had them using live instruments, but it's not so common these days.

Check Task Force.

They sometimes do live versions of their tracks, and they bring out a live band, Rawdog, for a lot of their shows.

Pharoahe Monch has been using a live band, and Common has as well in the past (Electric Circus era).

El-P has on for his new album, and Sergio Mendes and Miri Ben Ari have both done live work for multiple artists.

Ant uses live instruments a lot now to avoid sample clearance (noticable since Brother Ali's Champion EP), RJD2 does as well.

Lupe Fiasco uses a live band sometimes. i saw him perform when he was touring with the Roots but he didnt have a live band then.

Also, Kanye West performs with an live orchestra, conga player, & piano/keyboard player.
